You would have to declare that you had been ill, and anything thats happened in the last 2 years.

That in itself would either put the price up, or they would ask you to have a medical with their own doctors before they insured.

Unfortunately, you have to tell the truth. If it comes down to making a claim and they find one little detail you hadn't told them about, the insurance will be voided and all the money paid in will be wasted.

apart from my car i have nothing insured.

everyone tries to sell you payment protection insurance whenever you take out credit but that is proven to be a waste of money in 99% of the cases.
my home is in a reasonably crime free area so i do not get home insurance, i dont insure my life because when i die the money is worthless to me, i am pretty safe and have been in hospital only twice in 15 years so i don't get accident insureance, my dental care is free so that dosent need insuring either.

i don't plan on crashing my car so if car insurance wasnt a legal requirement then i wouldnt buy that either,

The only thing I can think of is contacting the British Association of Insurers and asking them for advice. I would think that there are some general rules that insurance companies have to stick to. I know that if you do have a preexisting condition, in your case that would be the ED, that insurers won't insure for it as there is every chance you will need medical help again for it which they'lll then have to pay for. As for excluding you from insurance all together seems odd as you are no more susceptible to acquiring some other unrelated illness than any one else. In saying that though an ED can cause long term damage that may need treating in the future so perhaps that is grounds they can exclude you. Try the BAI and see if they can help or can put you in touch with someone who can.
