Sometimes (not often, in the case of a foreign rental though) your cars' insurance may extend to a rental. Check with them also. If you find no free protections, bite the bullet and pay for their insurance. It's not pleasant to be involved in an accident in a foreign country without the necessary insurance.

A lot of insurance companies send dividend checks. It's basically profit that they have made through the year and by being a policyholder you have stock in the company. You should call them directly if you have any questions, or deposit the check and wait 10 days for it to clear. I hope this helps.

You need to secure a stable financial income. While starting your own business is admirable at your age, it is very risky, especially since the two of you want to move your family out and have a wedding too. I would highly suggest getting a job with an insurance agency first, to get your heels wet & gain the inner-workings knowledge of the insurance industry.
