If you've worked in this industry for 10 years, then you should be able to tell if the guy is extremely busy, or if he's been yanking your chain.
It is a possibility that he may have wanted you "out of the way" in order to hire a friend of his.
It's also possible that he is checking to see if you are going to be impatient and annoying and unable to wait. Testing you to see if you can cut it.
Are you making the same wage that you were before? Were the tips much better out front?
If it's been 6 weeks and you've seen no advancements, then ask for a sit down when things are quiet.
Keep negativity and name calling out of it. It is unprofessional.
Also, speak to your front of the house manager and ask if it's possible that you can go back to what you were doing.
Staff and Managers come and go in this business, and it may not be a long wait before there is a new sous chef.
If you like where you are working, keep working there, at your old position.
When there are new managers, then you can speak to them and discuss a new approach to your job.
Be patient and professional.

So I'm going to assume no vehicles involved, and you don't own your building, but you're in a mall in an urban area.

You're probably looking at $8,000, including workers compensation, property coverage, general liability coverage, and commercial excess coverage. No benefits for your employees.

It's not wrong because your reason is a medical one. You are not taking advantage of any programs, you are a model for what those programs are for.
Someone who has a child without insurance for the sole purposes of collecting money and other benefits is someone who is taking advantage. You are doing this to fulfill a dream, an opportunity that may not be available to you later on.
