You really need to get some research done on this subject. No-one can tell you how much money you will need up front - that depends on what property you buy or rent, what the overheads are, how much alteration & decoration is required, how much you need to spend on tables, chairs, counters etc. Check out the local competition and see what service they provide and what they charge, then source suppliers and work out your costs. Remember that people will happily pay a lot more for home-made cakes and scones, rather than average shop-bought goods. Remember to take into account utility bills, insurance costs, the cost of any licenses, laundry & cleaning costs etc when working out your overheads. Would you need to employ someone to help you?
There may still be a market for this type of business, a lot depends on the area and the local competition. Just remember that you will be competing against established businesses with a far larger range of food than you are going to sell, so you need that little something extra to keep people coming back.

A lot of large corporations have a similar type of Intern Programs to help introduce Juniors and Seniors in school to the various industries.
Many large corporation provide "recruitment" type of tours for juniors and seniors where take them through their operations to see what is done and how they do it.
I am all in favor of any on-the-job training. This is where the students actually learn operations.

If you were unable to recoup from that, and remain calm, that's not their fault. You're overreacting.

Otherwise, they're 100% correct.

If you're unable to prove anything you lost, then by the books, you did not lose anything.

You're entitled to legitimate doctors bills, which you say you can't prove.

You're entitled to legitimate loss of income, which you can't prove. Which is really moot, anyway. Unless you were entirely physically unable to do work, you don't have loss wages. If you were just stressed, and felt unable to work, that doesn't entitle you to a thing. If you own your own business, your business should have been able to manage without you, unless you're the only employee. In which case, you don't have a business, you're just self-employed.

You're entitled to damages to the vehicle, which you can prove.

So, figure out the total damages to your car, and that's what you should expect from a settlement.

Look at it from their perspective. Let's say you hit their client, and they're claiming 20,000$, but can't prove a single bit of it? Would you feel like they're entitled to it? Not one bit. And neither will the courts.
