It depends on what state your located in. Every state has its own laws about such things. Look on your gov’s website and it can tell you what you need to know. But in short he signed the lease, correct? Look over the contract and see if there is any loop holes in the wording of it, he may be trying to wiggle out of the lease by bad wording. In short, he signed the lease, it was his responsibility to know all of the things he would need in order to occupy the building. Its not your fault that he couldn’t obtain insurance.

Cover her for WHAT? If you get injured and sue her? Probably not. If the horse gets injured while you're riding? Probably not.

Without knowing exactly what coverage she's checking, or what state you're in, it's impossible to know.
